Horrible Ideas: Pizza Beer with Real Pizza Bits

Right over my shoulder sits a copy of Randy Mosher’s Radical Brewing, my very favorite homebrewing book and one of the only ones I’d recommend to those uninterested in brewing but interested in beer. Besides serving as a great tour of the more esoteric styles, Mosher also gives some examples of brewing with strange ingredients—chicken and mushrooms are the ones I always mention when my goal is to turn someone’s nose into a knob of confusion.
But the thing about those weird brews is that they actually try to put together a beer that highlights and complements the flavors rather than just chucking the strange ingredients in and seeing what happens. Chucking is what Illinois brewer Tom Seefurth seems to be doing with his new “Pizza Beer,” in which disgusting globules of pizza ingredients float unprocessed in a bottle of beer.
“It’s pizza and beer in a bottle,” Seefurth, a self-proclaimed beer nut, says.There are actually real pieces of pizza stirred into the mix.
The kettles and tubes of Seefurth’s tiniest of breweries all come together beside the hundreds of beer cans in his collection.
