Cahill’s Irish Porter Cheddar
Posted in: Food
There’s a reason that beer and wine go so well with cheese and chocolate: all are a reduction of larger quantities of goodness into small quantities of greatness. I once had a selection of fresh bleu cheese paired with Belgian beers so boiling with yeast and bacteria that it nearly knocked my immune system clean offline. (Despite my endorsement, they never did use ‘It’s a plague of flavor!’ on their packaging).
Now I can’t say the Cahill’s Irish Porter Cheddar is the most appetizing wheel of cheese I’ve ever seen, but first-rate fromage ain’t always pretty. It’s 17 bucks a pound (and that before shipping), but I can see myself washing it down with some quality porter (such as my sorely-missed Bully! from Boulevard Brewing, not available in New York).
