Yo Sushi in London has had this type of thing running for about a decade. Of course it is nice to see any of the Puritan laws of the USA injected with some rationality, and beer.
The bar is called Stats. I’ve been meaning to make it down there, but haven’t had a chance, and I think it’s pretty near all the stuff that got wrecked in the tornado that tore through downtown. I like it most not for how much you can drink, but for how little you can, if that’s what you want. Only want to try a few ounces of this particular beer? No problem, you only pay for what you pour. If I make it down there I’ll post something in the forum about it.
