It uses a bechamel sauce as its base. I skip the Worcestershire sauce for The Wife, and use a different cheese blend: 4oz sharp cheddar, 2oz gouda, 2oz fontina, and 2oz havarti... or some other mix and blend. It's a special occasion dish, because the cheeses are expensive and the fact it uses like a half pound of butter. In the quest for the best Mac and Cheese recipe, I found this recipe.
