Hands down, Macaroni and Cheese must be one of the world’s greatest comfort foods. A few years back Carolyn and I decided to look for the “Greatest Mac and Cheese recipe of all time.” While I’m not sure this White House Kitchen recipe is the one, it was good enough that we stopped looking! You have to think the fatty plate of cheddar-smothered pasta President Ron sat down to after a hard day of demanding Gorby tear down that wall is gonna be good.
We’ve been using the recipe for several years. It certainly beats the heck out of a box of Kraft. You can be pretty sure the White House kitchen has clue.
While considering what recipe to include here, I remembered reading a newspaper article that said that President Ronald Reagan liked to celebrate his birthday by having his favorite dinner — macaroni and cheese…Wondering what recipe he enjoyed, I telephoned the Ronald W. Reagan Presidential Library and Museum bookstore and asked whether they knew anything about the macaroni and cheese recipe. Without hesitation, they told me about The White House Family Cookbook by executive chef Henry Haller and Virginia Aronson.

In the quest for the best Mac and Cheese recipe, I found this recipe. It uses a bechamel sauce as its base. I skip the Worcestershire sauce for The Wife, and use a different cheese blend: 4oz sharp cheddar, 2oz gouda, 2oz fontina, and 2oz havarti… or some other mix and blend. It’s a special occasion dish, because the cheeses are expensive and the fact it uses like a half pound of butter.
While I’m not a big fan of Emeril’s shtick, this recipe for Mac and Cheese is one of the best that I’ve ever made.
