Oversaucing is a serious problem. Ok maybe it’s not serious, but I do agree with the guy. A lot of people treat sauce like it IS food rather than just something that gives flavor to food, it bugs the shit out of me. Chips and salsa is another place where people overdo it. You’re supposed to be eating the chip, and just flavoring it some with salsa, not heaving nasty chunks of tomato and cilantro a mile high into your fat gob.
Sometimes I don’t realize how opinionated I am on something until I start actually writing it down. I’m going to stop before I spin out of control on a friggin’ sauce rant.

I happen to like a lot of sauce, with lots of sausage or ground beef in it. Hell, I’ve been known to put chili on my pasta. The thinker, the better. And it’s damn good! So Mario can shut the hell up and go back to Italy while he’s at it. There’s nothing wrong with the sauce being a significant part of a meal.
There are some sauces that I would be perfectly happy to just eat with a spoon.

he’s assuming, of course, that you’re starting with good pasta, and not bad dried pasta. that being said, there are plenty of good-quality dried pastas.
but listen to the guy to this extent: take the time to make fresh pasta, and then sauce it lightly. it is SO much better than crappy, dried, extruded pasta. i mean its a world of difference.

I disagree joflow. Chips, while tasty, are a means to an end for eating good salsa. I don’t understand people who dip chips into the salsa only to pull out with just a coating of tomato juice. There’s chunks in the salsa for a reason, friend.
why eat chips and salsa when you can eat chips and ranch? i’m not a big fan of chili’s ..but they have by far the best tortilla chip/ranch combo.
Mario Batali is a god. Listen to this man, he is one of the best chefs in the world. I want to give him a hug.

To the people who bad-mouth Mario on this site, what you say is insignificant. You’re most likely overweight, from middle america and actually buy pasta sauce in a jar. Simply put, Mario is explaining the sauce to noodle ratio which emphasizes the delicate balance of flavors and textures defining Italian cooking. It’s concept that will most likely never be understood in america, especially below the mason-dixon line where the scales prove that the people there are definitely guilty of over-saucing everthing.
