The Steakhouse Index

Slate’s capable Daniel Gross looks at the falling profit margins of big chain steakhouses, which aren’t exactly dying quite yet—they’re still making a profit—but are clearly taking a hit. For one: increased ethanol production is causing corn prices to spike that could otherwise be used to feed cattle. That’s a good thing in my estimation: cows are supposed to eat grass. [Slate]
