Wisebread has an interesting short history of “baby carrots,” which aren’t young carrots as you might think, but full-sized carrots that have been washed, peeled, and whittled down into uniform pieces. And while baby carrots are pretty good, the author of this piece argues (correctly) that baby carrots don’t taste like carrots. The lack of peel causes them to lose essential carrotness.
We rarely ever peel our vegetables, instead keeping the skin on potatoes even when mashing them. I like the texture and the flavor. Plus buying whole vegetables is way cheaper, which was Wisebread’s initial point. Susie saw a bag of washed, peeled, and sliced potatoes for sale the other day at the supermarket. She didn’t look at the price, but I guarantee they cost two-to-three times the amount by weight of a regular ol’ potatoes.

This might be true of tinned or frozen carrots but I buy fresh baby carrots regularly and they have peel.
