The head sushi chef is out back getting it on in the backseat of his car, so his assistanst has to prepare the fugu. Manual in one hand, knife in the other, he goes at the fugu -- "Poison fish, poison fish, poison fish . . . ahhh tasty fish!" Put your trust in the hands of the chef and you will have things you never imagined. I highly recommend you read the chapter on Masa in Anthony Bourdain's Nasty Bits before you go.
